Cà phê trứng is a creamy, custard-like coffee invented in 1946 when milk was scarce. It tastes like liquid tiramisu.
Café Giảng on Nguyễn Hữu Huân is where it was invented and is still run by the original family. Café Đinh and Café Phố Cổ also serve excellent versions.
Order it hot for the full meringue-like texture. Stir gently from the bottom to mix the espresso layer with the whipped egg cream on top.
