Don't ask for parmesan on seafood pasta

Italians never put cheese on seafood. Don't request it. Don't reach for the cheese shaker.

Cheese is for tomato, cream, and meat sauces. Seafood pasta (vongole, frutti di mare) is finished with olive oil and parsley.

The same rule applies to spicy pasta like aglio e olio — no cheese.
